It's not as easy to find a vegan restaurant, or even a vegetarian restaurant in Las Vegas as, for example, it is in San Francisco. On that same note, it's not as easy to find good vegetarian or vegan Japanese food such as vegan noodle bowls, vegan sushi, and vegan bowls. Many of these dishes typically have traces of meat-based broth which is as good as eating meat, as any vegetarian or vegan would know.

There are also other non vegan/vegetarian ingredients often in these dishes that are not as well known, such as fish sauce and other ingredients with animal protein. For example, if you like Tempura, and you are a vegan or vegetarian, you are limited in you selection and must always ask the waiter or waitress what the Tempura batter is made with. Often, since the waiter or waitress doesn't do the cooking, they will not know and go ask the chef. The problem is the chef on duty by that time is often not the chef that made the batter for the Tempura and may or may not know. This may put the person ordering at risk of food illness if deciding to order based on what an unaware, or worse uncaring waiter or cook knows about their food.
